What to do with the Fruit Trees?

I'm wondering what to do with the new Fruit Trees. Apart from the Pear, the others have many young fruits already. I reckon I shouldn't allow too much fruit to mature - but should I strip them all off? I'll do a bit of research but I'm tempted to thin them down a lot.

The new Apple Tree has a few bunches with many apples developing. Many may drop off anyway, but I should probably remove them all:
